Site selection becomes key as sub-appellations are ratified and awareness of “terroir” grows in the winemaking community. In the mid-eighties, two trends begin to take hold: the “oak bomb” and the “food wine.” The former emphasized a tendency toward a strong oak signature in Cabernet while the latter focused on a European style of wine with higher acid levels. Neither trend was particularly well accepted! But it was part and parcel of a larger evolution. A phylloxera outbreak sent us out into the vineyards to replant, allowing us to choose new rootstocks and clones from the scion, as well as new trellising systems that enhanced shoot positioning, maximizing color and flavor development in the fruit.
